Cheesy Artichoke Dip
Serves 6
- ¼ cup mayonnaise (olive-oil based)
- 3 tablespoons grated Parmesan cheese
- 2 scallions, finely chopped
- 1 garlic clove, minced
- 1 teaspoon fresh lemon juice
- ¼ teaspoon ground black pepper
- 1 (14-ounce) can artichoke hearts, drained, rinsed, and coarsely chopped
Preheat oven to 425°F. In a medium bowl, combine mayonnaise, Parmesan, scallions, garlic, lemon juice, and pepper. Add artichoke hearts and stir to evenly distribute. Place mixture in a small ovenproof bowl or ramekin and sprinkle with remaining 2 tablespoons cheese. Bake until cheese is bubbling and sides have slightly browned, 30 minutes.
