Cheesy Artichoke Dip

Serves 6

  • ¼ cup mayonnaise (olive-oil based)
  • 3 tablespoons grated Parmesan cheese
  • 2 scallions, finely chopped
  • 1 garlic clove, minced
  • 1 teaspoon fresh lemon juice
  • ¼ teaspoon ground black pepper
  • 1 (14-ounce) can artichoke hearts, drained, rinsed, and coarsely chopped

Preheat oven to 425°F. In a medium bowl, combine mayonnaise, Parmesan, scallions, garlic, lemon juice, and pepper. Add artichoke hearts and stir to evenly distribute.
