Ingredients:

• ¾ cup almond flour

• ¼ cup gluten-free cornmeal

• 1 teaspoon baking powder

• ½ teaspoon salt

• 2 eggs

• 4 tablespoons butter

• ¼ cup full fat unsweetened yogurt

Serving suggestion: Serve with a slab of butter as an appetizer or serve alongside a main meal. Baking tips: Omit the cornmeal and add in ¼ more cup of almond flour, if desired.

Cornbread Muffins

Directions:

Preheat your oven to 350°F, and grease a muffin tin with coconut oil. Start by creaming the butter and adding in 1 egg yolk at a time, placing the egg whites into a separate bowl. Add the remaining ingredients into the butter and egg mixture, and mix until combined. Set aside. Whip the egg whites with a stand mixer or a handheld mixer until stiff peaks form. Fold the butter mix into the egg whites. Mix until just combined. Pour the batter into the muffin tins, and bake for 20 minutes or until the tops of the muffins are golden brown. Enjoy while warm!
